Big Tree Distillery is the result of a gin-loving husband and wife team who love good gin so much they decided to make their own. Introducing Catherine and Gary, who are devoted to bringing you a truly home-grown and delicious gin.

Big Tree Gin is distilled in the Macedon Ranges region of Victoria, on Jack’s Springs Farm and we produce a range of farm crafted small batch Australian gins. 

Our beautiful bottles are designed to be kept long after the gin is gone, with artwork painted by local artist Sarah Gabriel with limited editions of each piece in the series.

Our Gins are created by using the finest ingredients, collecting fresh rainwater from the farm. Some gin botanicals we grow and some we source off farm, but where possible we pick and forage some of the more interesting Australian gin botanicals as locally as possible with the help of our gin loving botantist.

The shape of the still is important to get the right flavour of the gin, as the amount of internal re-flux varies between different still shapes. We decided to use an all Australian still designed by Knapp Lewer in Hobart Tasmania. Beryl, our 300 litre pot still has a lovely big belly to allow us to steep the gin botanicals overnight along with the farms pure rain water and the neutral grain spirit.

Our bottles are designed so that you will want to keep them once the gin is finished. We think they are just too lovely to throw away, especially when you can recycle them and re purpose them, ideal for a vase or a water bottle.

The bottle artwork was painted by local artist Sarah Gabriel and there are four illustrations in the series. All artworks illustrate gin botanicals, some unique to Australia showcasing the birds that visit us regularly on the farm at Jack's Springs.

The first in our series features the New Holland Honey Eater and the Tasmanian Pepper Berry that grows in the Macedon Ranges.
