In honour of LARK’S 30th anniversary comes a unique collaboration with our long time friends at Seppeltsfield. Renown globally for their Australian fortified wines, Seppeltsfield boasts some of the oldest wine casks in the country, and this PARA 100 is an expression from the HOUSE of LARK that represents this history, as well as our dedication to innovation and proven technique.
This 2022 rare cask carries more peat influence than its predecessor, bringing balance to the sweet, and oak driven fortified finish.
The Rare Cask Series is a celebration of Tasmanian whisky both rich in character and heavy with history. It’s an endless pursuit of the abandoned exceptional — combing countries for casks both rare and remarkable. It’s an exploration of evolution — of new life blossoming within the old, in extraordinary, unmatchable ways. A pursuit for the extraordinary realised through unearthing some of the world’s most rare and storied casks. The resulting expressions are unique single malt celebrations of character, culture and the particular casks in which they are finished.
The Rare Cask Series Para 100 release is our single malt finished in casks that once held 100-year-old Seppeltsfield Para Vintage Tawny.
Your 700mL bottle is accompanied by a copper medallion meticulously handcrafted from a decommissioned Lark copper pot still, and a complimentary 100mL bottle enabling the collector to enjoy and savour now.
TASTING NOTES
Nose: Subtle peat wafts from the glass, combined with dark red fruits, orange gateau and treacle.
Palate: Grilled pineapple appears, followed by burnt buttered toast and raspberry jam, sweet spice develops with sticky toffee.
Finish: Ashy peat lingers, leaving oily citrus, sultanas and oak, charming the senses and magnifying the moment.
