Once each year a batch of Australian distilled Canefire is selected to brew out to become Backburn. We only cold brew; a batch of Backburn can take up to 5 months to ferment.
Brewing out allows all the sugar in the patch to be utilised. Backburn then, is not as sweet as Canefire. It is however much more mellow because of the time spent gently brewing. Obviously this means that Backburn is a much stronger spirit at just over 100 US proof!
