What will your Aussie cocktail and cheese pairings be? Here are 6 of ours to inspire you. 

Gin Sour
60 ml Forty Spotted Pinot Noir Gin
20ml fresh lemon juice
15ml sugar syrup
20ml Egg White
3 red seedless grapes

Mix all ingredients vigorously in a shaker until fluffy. add ice to chill. Strain Strain and garnish with a grape

Pair with OEN by Bruny Island Cheeses - it's washed in local pinot noir before being wrapped in vine leaves and matured for 3-4 weeks.

Jungle Bird
60 mL Black Gate Dark Rum
20 mL Ruby Bitters
60 mL pineapple juice
20 mL lime juice

Pair with Havarti Infused with Jalapeño by Ashgrove Tasmanian Farm Cheese

Strawberry Daiquiri
60 mL Capricorn High Ester Cane
1/2 cup fresh strawberries, chopped, plus more for garnish
1/2 cup frozen strawberries, chopped
Juice of 1 lime
Sliced lime, for garnish

Zap everything into a blender until smooth. Garnish with lime and strawberry.

Pair with Seal Bay Triple Cream Brie by King Island Dairy 

The Chrysanthemum
20 mL Bass & Flinders Ochre Fine Aged Brandy
60 mL dry vermouth
10 mL Demoiselle Verte Original Absinthe

Add all in a mixing glass, stir well then add ice to chill. Strain into a chilled cocktail glass and squeeze orange peel over the top so oils fall on top.
Drop the peel into the drink.

Pair with Stokes Point Smoked Cheddar by King Island Dairy 

30mL Belgrove Peated Rye Whisky
15 mL sweet vermouth
2 dashes Angostura bitters

Add all to a mixing glass with ice, stir until chilled then strain into a chilled coupe.
Garnish with orange peel or maraschino cherry

Pair with Roaring Forties Blue Cheese by King island Dairy 

OCD Bloody Mary
45 mLs OCD Vodka
125 mLs – McLures Bloody Mary Mix

Add to glass vodka, then ice followed by Bloody Mary mix. Garnish with celery or cucumber.

Pair with Old Man by Grandvewe - sheep cheese matured for two months then hand-washed with Oaked Vodka
