Starting with their luxurious aged gin laced with 23 Carat Gold Leaf from The Perth Mint, they layer Davidson and Illawarra plums, pomegranate, blackberry, sweet orange and ginger, finishing with a hint of cinnamon and star anise. As with Christmas dinner, it may be a challenge to hold back from a second helping.

Serve with a Mediterranean style dry tonic and a cherry or sprinkle of blackberries for garnish.
