Take a sip, close your eyes and you’re in the middle of a Red Hill apple orchard: dappled sun on fruit-laden trees, the hum of bees, blossom drifting on the breeze. This release captures that moment in a glass - golden and silky, layered with honey-baked apple, subtle blossom aromas and a gentle spice that lingers long after each sip.
The apples were fermented and double-distilled at our Mornington Peninsula distillery, then laid to rest in large French oak puncheons for between four and six years. Time and patience softened the spirit’s edges, deepened its character, and revealed a complexity worthy of its heritage.
The result is something remarkable: the Mornington Peninsula’s very first Apple Brandy, a spirit that honours our orchard roots while unveiling a chapter never written before.
With only two barrels made, this is a rare and collectible release. Refined and elegant, it is as precious as the orchards it came from. A hidden gem best shared with friends.
Long before vineyards swept across the Peninsula, Red Hill was orchard country. Apples gave this place its rhythm through the seasons of blossom and harvest. For this inaugural release we’ve partnered with our neighbours at Mock Red Hill, a fifth-generation family orchard, certified biodynamic since the 1970s. Their fruit, grown in rich red soils, carries the true character of this land and the legacy of generations who have tended it.
