At Hobart Whisky, we generally select and marry whisky from different casks to build balance, depth and complexity across the palate, ultimately to make whisky we like.
Occasionally, a cask develops enough individual character that we choose to let it stand on its own.
Cask 80.38 is one of those casks.
Bottled at its natural cask strength of 64.1% ABV, the cask yielded just 83 bottles.
Tasting Notes
Nose: Crisp red apple, honeycomb, soft nougat and lightly smoked fruit cobbler, with a faint savoury hint of green tomato.
Palate: Clean and light on entry, developing into a creamy mid-palate. Toffee apple, vanilla and roasted nuts give way to berry confectionery, subtle spice and lemon meringue.
Finish: Marmalade and tart kiwi give brightness to the finish, fading into toasted coconut, dark chocolate and a subtle trace of earthy smoke.
