This is our Australian representation of a London Dry Gin. This gin consists of native or locally grown ingredients such as bush lemons, wild aniseed, home grown coriander, wild lavender and tasmanian pepper berry. The aroma of the juniper and citrus are ever present on the fore, followed closely by subtle berry notes. The flavour is a robust dry style gin with citrus and a touch of herbal influence. This is finished by a slow, slight paprika heat, given by the pepper berry. Though we do use Australian botanicals in this gin, we have balanced it I such a way to create an obviously London dry style.
We recommend this gin served with a light tonic (or half tonic half soda) and garnished with a sweet citrus i.e. pink grapefruit or blood orange.
